萝卜丝饼

我特别喜欢吃萝卜,因为知道它很健康,吃了嘴里,心里上都舒服。

萝卜丝酥饼,第一次吃还是很多年前在广东东莞出差,来接我的人,特意先绕道去了一家酒店买了几盒萝卜丝饼,说这是当地最好吃的。金黄酥脆的外皮,里面细细的萝卜丝,入口鲜香,让我印象深刻。

后来也吃过不同版本的萝卜丝饼,大多是酥皮制作,工艺较为复杂,技术要求较高。我也从来没有时间和胆量去试着做。但这次在我做义工的慈济厨房见识到了一款简单易做的家常版萝卜丝烫面饼,我立刻觉得找到了最适合的家庭操作方法,既省时省力,而且美味可口。反复在家操练了一下,摸索出了自己喜欢的配方。

原料馅料:

烫面面皮:

制作步骤

  1. 准备萝卜丝馅料:
    • 萝卜擦成细丝,放入开水中焯烫至变软,捞出挤干水分,并撒少许盐调味。
    • 热锅加油,用中火慢炒洋葱丝,炒至微焦后,加入十三香和花椒粉一起炒香。
    • 如果选用胡萝卜,此时胡萝卜丝和葱头丝可以一起炒。
    • 如果使用香菇,或者虾皮或海米,此时加入锅中一起翻炒至香味溢出。
    • 加入焯好的萝卜丝,撒入胡椒粉,拌匀后放凉备用。
    • 最后拌入葱花以保持它的绿色。
  1. 制作烫面面团:
    • 将70°C热水缓缓倒入面粉中,用筷子搅拌成絮状。
    • 这是用小美机和面,机器柔两分钟,
    • 面拿出整理一下就好就可以去饧了
    • 如果手工和,待稍凉后,用手揉成光滑的面团,盖上湿布,饧面30分钟。如果和好的面放冰箱过夜效果会更好。
  2. 包制与煎饼:
    • 醒好的面团分成8个等大的小剂子(每个约49克)如果想少做也可以做大一些75克。
    • 取一个剂子,擀成圆片,包入适量馅料,收口捏紧后翻面,轻轻压扁成饼状。
    • 平底锅中倒少许油,中火加热,将萝卜丝饼放入锅中火煎至两面金黄酥脆,即可出锅享
    • 用。
    • 真正可谓薄皮大馅儿。

如何处理剩余馅料?

如果馅料剩余,可加入2个鸡蛋适量葱花或其他绿色蔬菜,再加2大勺面粉,搅拌均匀后直接煎成萝卜丝鸡蛋饼。

煎好后搭配蒜末和辣椒酱,风味更佳!

What to Do with Leftover Filling?

If you have extra filling, you can turn it into a shredded radish omelet by mixing in 2 eggs, chopped scallions, or other leafy greens, plus 2 tablespoons of flour. Pan-fry until golden brown, and enjoy with minced garlic and chili sauce for an extra kick!
