  4. Instant Yeast: Can often be mixed directly with dry ingredients without proofing, but check the package. 
 
Storage & Freshness
  • Sealed: Store in a cool, dry place; sealed packets last up to 2 years.
  • Opened: Pour into an airtight container (like a jar) and store in the fridge (up to 4 months) or freezer for longer life.
  • Test: If unsure, proof a small amount (as above) to see if it foams; no foam means it's dead. 
 
Adjusting for Recipes
  • More Yeast (up to 3 tsp): Speeds up rise, but too much can weaken gluten and affect flavor; great for quick breads.
  • Less Yeast (1 tsp): Slows rise, developing better flavor and stronger gluten.
