葱花软枪饼

3杯自发面粉,1杯水,拌好,揉成2个面团,醒半小时.

把面团揉开成长条,抹上油,撒上一点盐(自发面已经有盐),铺上葱花(绿的部分,白的太硬会刺破面皮),卷成长条筒,再盘起来,压扁,放进不粘的锅,加油和水,盖上盖,小火焖煎到两面金黄.

牛尾川过开水,换水,加姜片,料酒,扁尖,煮2小时烂为止,加蕃茄,盐,味精,胡椒,葱花.
