上两个小吃 - 越南肉饼(Vietnamese Pate), 酒煮淡菜(Mussels steamed in wine)


越南肉饼, Vietnamese Pate

材料:

2LB猪肉糜
1 TB 太白粉,
1 tsp 苏打粉, baking soda
½ tsp 月桂粉, cinnamon
¼ c 鱼露,
1TB 糖,
1 tsp 盐,
½ tsp胡椒粉,

把所有的材料拌匀, 放入一个垫有保鲜膜长方型的容器, 保鲜膜两面留5-6寸, 压平肉泥, 保鲜膜两面对盖过来包好, 进冰箱过夜, 第二天, 再用锡纸包好进 350F烤箱,烤1小时, 冷却后切片夹法国面包和甜酸红白萝卜, 薄荷叶, 香菜吃, 很好吃.

酒煮淡菜, Mussels steamed in wine

材料:

3LB淡菜
4TB奶油,
1/4洋葱,
4-5蒜,
1TB百里香, thyme
1 杯白酒,

小香葱, chives

用奶油炒香, 洋葱, 蒜, 百里香, 到入淡菜和酒盖盖, 大火烧4-5分钟, 淡菜开口就好了, (不要煮久了, 煮老了就缩小了, 又老又硬, 不好吃). 撒香葱, 汤汁用来沾法国面包吃.
