I cook chicken twice a year in average. Oven baked whole chicken and Fried chicken drum sticks. It is not because we don't like chicken. It is because so hard to deal with the bacteria and antibiotics they carry. It requires extra sanities in the kitchen after cooking. Maybe I am just so lazy. Therefore, we just prefer other type of meat in our diet. Unless they are from a farm where we trust. However, fried chicken is always good, especially homemade.
我家很少吃鸡肉，一年通常吃两餐：烤全鸡或炸鸡。去外吃饭从不点鸡肉。不是不喜欢鸡肉。是不愿意处理鸡肉本身的细菌和抗菌素。每次做完鸡肉，整个厨房都必须彻底消毒，很麻烦。也许我太懒，所以我们还是选择其它肉类为好。除非鸡肉来自你所信任的农场。不管怎样，炸鸡总是非常好吃的，特别是自己家做的。

Flour mix: flour with salt and pepper
Sea salt and fresh grounded pepper

面粉混合物：面粉加盐和胡椒

Chicken drum sticks seasoned with sea salt and fresh grounded pepper for 30 minutes. (keep them in the fridge until they are ready) Beat 2 eggs in a medium container. Dip each chicken drum sticks in the egg batter and coat it with flour mixture. Set it on the side. Repeat the rest of the chicken. Then dip each drum stick in the egg batter again and coat it with flour mixture the 2nd time. Repeat the rest of the chicken.
鸡腿撒盐和胡椒腌３０分钟。放入冰箱待用。用一中号盆将２只鸡蛋打碎。另取一中号盆面粉加盐和胡椒混合均匀。每只鸡腿沾蛋液再裹上面粉。放置１０分钟后再沾蛋液再裹上面粉。
Heat oil in a cast iron pan. Fried each chicken drum sticks until golden brown. They are crispy outside and tender juicy inside.
铸铁锅加油加热。油热后下入鸡腿炸至金黄。外脆里嫩。
Take a close look. It is crispy outside and tender juicy inside.

Side dish 1: Creamy potato salad
3-4 Potatoes
2 hard boiled eggs
2 tbsp chopped onion
2 tbsp chopped red pepper
2-3 slices pickled cucumber chopped into small pieces
few chopped green onion
1tbsp olive oil
1tbsp vinegar
1tsp mustard
Sea salt and pepper
Boil potatoes and eggs and cut into chunks. Mix with red pepper and pickled cucumber. In a small container, combine olive oil, vinegar, mustard, salt and pepper and mix well. Pour the mixture into potato dish and mix well. Season it with salt and pepper if it is needed.

洋葱２大勺，切丁
红椒２大勺，切丁
酸黄瓜２－３片，切丁
青葱少许切丁
柑欖油１大勺
醋１大勺
芥末酱１大勺
海盐和胡椒
土豆，鸡蛋煮好切块。拌入洋葱丁，红椒丁，酸黄瓜丁。用一小盆，将柑欖油，醋，芥末酱，海盐和胡椒混合好。倒入土豆色拉中。如果味道不够，再放入海盐和胡椒。
Pretty easy. Simple and delicious. 很容易吧？简单又美味。
Side dish 2: Buttered sweet corn
They are from our garden last year. They kept well in our freezer. Boil water first then boil sweet corns. They are so yummy.
配菜２：奶油甜玉米
玉米是去年我家菜园的收获。真空冷冻保存的很好。水烧开后，下玉米。玉米好甜。
Side dish 3: Pickled beets
They are from our can goods. Again I pickle them last fall. They are delicious with fried chicken.
配菜３：腌甜菜
这是我家的罐头。是去年秋天做的。配炸鸡，好得不得了。
Here is my plate. My husband like with butter and salt & pepper. I love mine with butter only.
这是我的盘子。我家先生喜欢玉米擦奶油，盐和胡椒。我只喜欢擦奶油。。。
Dessert: Chocolate brownie
This rich chocolate brownie was made of walnuts, dark chocolate, eggs. It makes perfect dessert.
甜点：巧可力不朗尼
这个Brownie是用面粉，鸡蛋，黑巧可力，核桃和糖做的。做饭后甜点最合适不过了。特别是吃过炸鸡，巧可力Brownie可洗去口中腻味。
