新年第三趴--重口味的cajun/creole南方菜

这次请的客人是美国Louisiana州长大的华人。特别做了cajun creole口味的传统菜式,喜欢重口味的一定会爱这类菜式,特别是在冷冷寒冬,辣辣的很开胃,吃得宾客尽欢。
 
Chicken and Sausage Gumbo  南方式鸡肉香肠浓汤

Gumbo大概是Lousiana最有名的特色料理了。在一口大汤锅里,先混合油和面粉,搅拌良久,然后加很多香料,秋葵,肉类,搅拌加热,最后煮成一大锅香香浓浓的gumbo汤,配上米饭。我用的是Emeril Lagasse的方子,但用秋葵代替了file powder。
 
1 tablespoon plus 1/2 cup vegetable oil
1 pound smoked sausage, such as andouille or kielbasa, cut crosswise 1/2-inch thick pieces
4 pounds chicken thighs, skin removed
1 tablespoon Essence or Creole seasoning, recipe follows
1 cup all-purpose flour
2 cups chopped onions;1 cup chopped celery;1 cup chopped bell peppers
1 teaspoon salt;1/4 teaspoon cayenne;3 bay leaves
9 cups chicken stock or canned low-sodium chicken broth
1/2 cup chopped green onions;2 tablespoons chopped parsley leaves
1 tablespoon file powder
Hot sauce
 
Directions
In a large enameled cast iron Dutch oven or large pot, heat 1 tablespoon of the vegetable oil over medium-high heat. Add the sausage and cook until well browned, about 8 minutes. Remove the sausage with a slotted spoon and drain on paper towels. Set aside.
Season the chicken with the Essence and add in batches to the fat remaining in the pan. Cook over medium-high heat until well browned, 5 to 6 minutes. Remove the chicken from the pan, let cool, and then refrigerate until ready to use.
Combine the remaining 1/2 cup oil and the flour in the same Dutch oven over medium heat. Cook, stirring slowly and constantly for 20 to 25 minutes, to make a dark brown roux, the color of chocolate.
Add the onions, celery, and bell peppers and cook, stirring, until wilted, 4 to 5 minutes. Add the reserved sausage, salt, cayenne, and bay leaves, stir, and cook for 2 minutes. Stirring, slowly add the chicken stock, and cook, stirring, until well combined. Bring the mixture to a boil. Reduce the heat to medium-low and cook, uncovered and stirring occasionally, for 1 hour.
Add the reserved chicken to the pot and simmer for 1 1/2 hours, skimming off any fat that rises to the surface.
Remove the pot from the heat. Using a slotted spoon, remove the chicken thighs from the gumbo and place on a cutting board to cool slightly. Remove and discard the bay leaves. Pull the chicken meat from the bones and shred, discarding the bones and skin. Return the meat to the gumbo and stir in the green onions, parsley, and file powder.
Spoon rice into the bottom of deep bowls or large cups and ladle the gumbo on top. Serve, passing hot sauce on the side.

2 1/2 tablespoons paprika;2 tablespoons salt;2 tablespoons garlic powder;1 tablespoon black pepper;1 tablespoon onion powder;1 tablespoon cayenne pepper;1 tablespoon dried oregano;1 tablespoon dried thyme

这个蟹肉饼是我家的招牌菜之一,做过很多次,真的真的太好吃了!每次请客都是第一个被一抢而空的盘子。超级霹雳大推荐!
 
1/2 cup mayonnaise;3 eggs, slightly beaten;2 teaspoons sweet hot mustard
1 lbs lump crab meat Costco卖的)
2 tablespoons chopped cilantro;2 tablespoons chopped red pepper;2 tablespoons sliced green onion;1 teaspoon pickled relish
2 cups panko
1 teaspoon Old Bay seasoning (optional);1 teaspoon cayenne pepper or hot sauce;panko for coating
 
Stir the mayonnaise, eggs and mustard together.  Fold in the crab meat.  Add cilantro, red pepper, green onion and relish.  Gently fold in the bread crumbs, bay seasoning and cayenne.  Form small cakes and coat with bread crumbs.  Panfry gently in oil until golden brown. (这一步要小心,中火两面煎两分钟就足够了)
 
Blackened Salmon 黑煎三文鱼

三文鱼擦干,用
1 tsp cayenne pepper, 盐和胡椒,加点1 tsp thyme, basil, oregano抹遍全身。12寸平底不粘锅架炉上,中小火,上少许橄榄油。等油锅稍热,放入三文鱼,鱼皮朝下,煎3分钟左右,然后把鱼肉面朝下煎,三分钟左右。然后在把鱼皮面煎一两分钟,鱼肉面再煎一两分钟。大概七分熟就好,三文鱼关火后会继续自然由热度慢慢熟。

的方子。Creole是辛香料口味浓郁的路易斯安那州特色风味,这个菜也是配饭吃,大概像烩饭一样。
 
1/2 cup diced green bell peppers;1/2 cup diced onions;1/2 cup diced celery
1 teaspoon chili powder
1 (14-ounces) can tomatoes;1 (8-ounce) can tomato sauce;1 tablespoon hot sauce;1 tablespoon Worcestershire sauce
1 teaspoon white sugar;Salt and pepper
1 1/2 pounds peeled and deveined shrimp
Green onions, for garnish
 
Preheat crock pot on high.
In fry pan, heat olive oil. Add peppers, onions and celery. Cook until softened. Add chili powder and saute until caramelized. Remove from heat and pour into crock pot. Add tomatoes, tomato sauce, hot sauce, Worcestershire, white sugar, salt and pepper.
Cook for 3 hours. Add shrimp and cook for about 3 minutes. Serve over rice. Top with chopped green onions.

1/8 cup Garlic, minced;1 Cup Tomato, diced;1/2 Cup Green Onions, finely sliced
Kosher salt, black pepper and Cayenne to taste
Cut the corn off the cobs using a very sharp knife. The trick is to cut about half way through the kernels, then go back and scrape the cobs with your knife to extract all of the milk into a bowl. Reserve the corn milk.
Add the corn, onion, celery, bell pepper, Thyme and a healthy pinch of salt and reduce the heat to medium. Cook stirring often for about 15 minutes, or until the vegetables are tender.
Add the garlic, tomatoes, reserved corn milk and another pinch of salt. Cook for another 15 minutes, stirring occasionally.
Add the green onions, salt, black pepper and cayenne to your taste.
 
Creole Okra and Tomatoes 番茄烧秋葵

1 Cup Spanish Onion, chopped
2 Tbsp Garlic, minced;4 Tbsp Hot peppers, minced;3 Cups Fresh Okra, washed trimmed and cut into 1/2 inch thick slices
2 Cups Insanely ripe Tomatoes, chopped;2 tsp Fresh Thyme, chopped;2 tsp Fresh Basil, chopped
2 tsp Green Onions, thinly sliced;Kosher salt, black pepper, cayenne, and Crystal Hot Sauce to taste
 
Saute the onions, garlic and peppers, and season with a little Kosher salt. Sweat until the onions are translucent. Add the Okra, season again with a little salt, and cook until the Okra ceases to rope, which means that you don’t see threads when you stir the pot.
Add the Tomatoes and Thyme, plus a little more Kosher salt to make the tomatoes break down.
When the tomatoes break down and reduce slightly add the basil, Green Onions, and salt, pepper and hot sauce to taste. Serve as a side or over rice.
 
 
Cajun Oven Baked Squash / Sweet Potato 辣味烤南瓜烤红薯

1 1/2 teaspoons paprika
1/4 teaspoon black pepper
1/4 teaspoon onion powder
1/4 teaspoon dried thyme
1/4 teaspoon dried rosemary
1/4 teaspoon garlic powder
1/8 teaspoon cayenne pepper
2 large sweet potatoes/squash
DIRECTIONS:
1
Preheat oven to 375 degrees F (190 degrees C).

In a small bowl, stir together paprika, black pepper, onion powder, thyme, rosemary, garlic powder, and cayenne pepper.

Slice the sweet potatoes in half lengthwise. Brush each half with olive oil. Rub the seasoning mix over the cut surface of each half. Place sweet potatoes on a baking sheet, or in a shallow pan.

Bake in preheated oven until tender, or about 1 hour
另外做了一味柠檬蜂蜜口味的给孩子们。

Spinach and Mushroom 菠菜炒蘑菇

Ingredients
1 pound white button mushrooms;Kosher salt and freshly ground black pepper
4 sprigs fresh thyme;1/2 cup thinly sliced leeks;4 tbsp minced shallots;4 small cloves garlic, peeled and smashed
1/4 to 1/2 cup dry Marsala2 (10-oz) bags fresh spinach
Heat a large saute pan or cast iron pan over medium heat. Add the olive oil and the mushrooms. Season with salt and pepper, to taste, and add the thyme and the garlic and saute. Cook until the mushrooms are tender and a lot of the liquid has evaporated from the bottom of the pan, 6 to 8 minutes.
 
Add the Marsala and cook until the flavor of the alcohol has mellowed considerably, 3 to 5 minutes. Remove and discard the sprigs of thyme and the garlic. Shut the heat off and stir in the spinach leaves so they wilt slightly. Season with salt and pepper, to taste. Transfer to a serving bowl and serve.
 
 
Green Beans and New Potatoes 四季豆烧马铃薯

自己吹一下,这样做虽然四季豆有点煮过头,甜味倒是特别突出。马铃薯也很好吃。
 
3 pounds fresh green beans;2 cups broth, plus more if needed
2 to 3 teaspoons salt + pepper + garlic;12 small red potatoes;1 onion, cut into slivers;Ground black pepper
 
Directions
Toss the green beans into the pot. Add the broth and House Seasoning. Cook over medium-low heat, covered tightly, for approximately 30 minutes, or until the beans are half done.
 
While the beans are cooking, peel a center strip from each new potato with a potato peeler. At the end of 30 minutes, add the potatoes and onion to the beans; add 1/4 cup more broth, if needed. Cook, covered tightly, until the potatoes are tender, approximately 25 to 30 minutes, periodically checking the pot to make sure a small amount of liquid remains. When the potatoes are tender, tilt the lid slightly, off to the side of the pot, and continue to cook until the green beans are wilted, approximately 15 minutes. 
 
Corn Casserole 玉米烩烤

Ingredients
1 (15 1/4-ounce) can whole kernel corn, drained;1 (14 3/4-ounce) can cream-style corn;1 (8-ounce) package corn muffin mix (recommended: Jiffy);1 cup sour cream;1/2 stick butter, melted;1 to 1 1/2 cups shredded Cheddar
Directions
Preheat oven to 350 degrees F.
In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter. Pour into a greased 9 by 13-inch casserole dish. Bake for 45 minutes, or until golden brown. Remove from oven and top with Cheddar. Return to oven for 5 to 10 minutes, or until cheese is melted. Let stand for at least 5 minutes and then serve warm.
 
Blackberry Cobbler 黑莓酥饼

传统南方甜点。
 
1/2 stick butter, melted, plus more for greasing pan;1 1/4 cups plus 2 tablespoons sugar
1 cup self-rising flour;1 cup whole milk;2 cups fresh (or frozen) blackberries
Whipped cream and/or ice cream, for serving
Directions
Preheat the oven to 350 degrees F. Grease a 3-quart baking dish with butter.
In a medium bowl, whisk 1 cup sugar with the flour and milk. Whisk in the melted butter.
Rinse the blackberries and pat them dry. Pour the batter into the baking dish. Sprinkle the blackberries evenly over the top of the batter. Sprinkle 1/4 cup sugar over the blackberries. Bake until golden brown and bubbly, about 1 hour. When 10 minutes of the cooking time remains, sprinkle the remaining 2 tablespoons sugar over the top. Top with whipped cream or ice cream . . . or both!
 
Bread Pudding  面包布丁

大概是最有名的南方甜点了。很容易做啊。
 
INGREDIENTS:
6 slices day-old bread
2 tablespoons butter, melted
1/2 cup raisins (optional)
3 eggs, beaten
2 cups milk
1/2 cup white sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
DIRECTIONS:
1.
Preheat oven to 350 degrees F (175 degrees C).
2.
Break bread into small pieces into an 8 inch square baking pan. Drizzle melted butter or margarine over bread. If desired, sprinkle with raisins.
3.
In a medium mixing bowl, combine eggs, milk, sugar, cinnamon, and vanilla. Beat until well mixed. Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture.
4.
Bake in the preheated oven for 45 minutes, or until the top springs back when lightly tapped.
